FOOD LAB: Sunnex Presents Chef Mitchies Cookware


Here at Food Lab we also value the importance of quality cookware in making  cooking and eating more enjoyable and healthy. And with these tools we can come up with the best cooking and dinning experience for all of us to enjoy! Today we feature a new cookware line up by chef Mitchie Sison, who was part of the cooking show barkada ka-toque.

Chef Mitchie confesses that she came from a family that loves to cook and eat. While both her dad and mom did not have any culinary background (her father is an engineer and her mother is a psychology graduate), they were both enamored with the world of cuisine. They created the original tapsilog concept.



Unable to find a good restaurant that serves homey meals, the Sison couple started their own restaurant and in the process of serving tapa, sinangag and itlog to hungry patrons, the sinangag was born.  The Sison’s business grew and for some time, they were managing five branches all over the metro. However, when Chef Mitchie’s parents retired in 2000, they decided to close the restaurants. The business may be closed but Epicureanism had already been cooked in the Sison children's DNA.



With a degree in B.S. Hotel, Restaurant and Institution Management at the De La Salle-College of Saint Benilde, Chef Mitchie was sent by the school to audition for the new show QTV 11 was cooking and the rest, as they say, is history.

  

While Chef Mitchie was still doing the cooking show, she was also doing culinary consultancy for establishments such as Dolce Latte Café and Gourmet Bakeshop, and Chew Junior Express. She also appeared in various shows and food magazines. Hong Kong cookware brand Sunnex also saw the potential of the young chef, taking her in to become a chief endorser for Sunnex Philippines.

Since 2008, Chef Mitchie has been doing cooking demos for Sunnex, expanding her forte to include savory dishes and even delectable baby food.

Chef Mitchie has also been operating her own commissary, Signatures by Miel Commissary, supplying various food products in food establishments and offering fine dining catering for small groups. But her biggest culinary dreams are to revitalize her parent’s restaurants, open her own cookie shop that offer endless variety of sweets and milkshakes, and start a bistro that serves healthy food.

Chef Mitchie longs to travel and soak up different food culture.  There are tons of good food being made from all over the world and when Chef Mitchie returns, expect to enjoy a plethora of real good food at our fingertips.

Now, lets look and test the cookware to a cooking demo by chef mitchie herself!
She prepared two dishes,  Apple and Pear Tart Tatin with Walnut Steausel and Chicken Marsala with Steamed Lemon Smashed Potatoes. And with the design and functionality of the cookware, it seems like she was just playing with the ingredients, but the results was very tasty and delicious!

Mitchie’s Chef’s Classics cookware consists of a 28 cm open grill pan, 32 cm covered wok, 18 cm covered sauce pan, 24 cm covered sauce pot, 20 cm open skillet, 25 cm open skillet, 30 cm saucepan with steamer insert, and a 5 piece cookware set.

Goodfellas, Mafia Dining in the City!




Metro Manila is a big Mafia City with a lot of huslin' and bustlin' people. And for many who considers themselves the 'mafia' can rely on a joint in Quezon city that can satisfy their craving for a dining experience and even have a lot of fun. It is Goodfellas Steaks and Burgers, located at K1st street and T. Gener near Kamuning Ave.

Goodfellas offers american cuisine with the touch of Italian influence which Godfather likes. The restaurant just opened last year and its location is perfect for a quiet yet fun ambiance that even celebreties like AJ Dee would be spotted dinning at Goodfellas.

Aside from the great food that you can feast upon, they also have this function room wherein you can not plot your schemes and can also request for mafia gear (hats and guns, don't worry they are not real) so you can truly live the mafia life !

Burgers is also its specialty with the meat also imported and made of high grade quality meat from the USA.
The ambiance of the place already tells you that this is their joint. Filled with a lot of pictures of popular mafia people. It seems that it will teleport you to a downtown New York diner and all you need are cigars (although smoking is prohibited inside there is the lounge outside for the smoking area).

Its very tasty and is made of quality cheese. Its super cheesy that I can't stop saying it so cheesy!  A standout from the many other cheese dishes from other restaurants. Perfect for the cheesy mafia! Despite the cheesy-ness,it has a distinct taste that make it a cut above the rest.


GoodFellas Steaks and Burgers is open from 11:00 AM to 12:00 Midnight Mondays through Thursdays, 11:00 AM to 2:00 AM Fridays and Saturdays, and Sundays from 10:00 AM to 11:00 PM.

Food Lab: WHY NOT? CHOCNUT CAKE


During Christmas time the thing we love to do on this celebration is... EAT. Its already a given and the challenge to food lovers is to enjoy the art of eating by devising new flavors but of the same Christmas spirit. And what I always want to "cook" are Graham cakes because (1) they are easy to prepare and (2) you don't need a oven (but you need a refrigerator). And like what I said there should be twist for this year, and I made my own recipe which I called.... WHY NOT? CHOC NUT!

Now the ingredients:
1. 1 pack Graham Crackers
2. 2. packs 250ml All purpose cream
3. 1 can condensed milk
4. Powdered chocolate
5. Sugar
6. Marshmallows (the little cute sized ones were out of stock so I used the ones that look lie frech fries)
7. 1 pack (of the legendary) CHOC NUT!


Now for the steps:
1. place first layer with Graham Crackers on a pan. Then sprinkle some chocolate powder above it and also the gaps that were uncovered by the crackers.


2. With the Choc nut, crush them using you hand and sprinkle them above the layer. Also its OK for you to leave some chunks to emphasize the flavor of the Choc nut in the dish. While doing this you can now place the creams into another pan and mix it with some condensed milk and sugar. Mix well and make sure no lumps or bubbles are formed.
3. You can now place some marshmallows above them. For the french fries style of mallows, you can pull them apart to make them shorter. Then after you can now pour the cream mixture.
4. Do the same layer procedure which may go up to 2-4 layers depending on the size of the pan. At the top, which should be the cream, we will now create the top layer. The top layer will be formed by the sprinkling the rest of the crushed choc nut covering the top layer.
5. If you still have marshmallows left you can decorate the top with anything that you want. For us, since its Christmas, we place there Happy b-day Jesus! (we have to make sure that mallows are enough to spell the out). Then with the powdered chocolate and condensed milk, mix them to make a syrup that you can design the top layer of the cake.

6. You can now place pan inside the refrigerator for about an hour as the cream freezes and its done!
An there you have it! WHY NOT? CHOC NUT Graham cake, made with very practical ingredients with a twist of a favorite Filipino confectionery.

Seattle Best Coffee Christmas Experience!




I am a late bloomer in terms of coffee shops and what they offer in each store. That is why one of the things that I would like to try is to experience being an actual barista. Though most coffee shops may have the the common elements, Seattle's Best Coffee has actually a lot to more to offer that meets the eye plus there is more!

They recently launched their Chistmas drink which is the cookies and mint which is available hot or cold (javakula) which is also in line with their promotion of getting a tumbler and a tote bag designed by Team Manila. All you need to do is fill up the card until you fill up all the spaces for the stickers and this limited edition item will be yours! Oh! Did I mentioned that the Christmas drink is a sure winner because of its unique taste of  peppermint and Oreo cookies! Too bad its a seasonal drink... but better enjoy it while it lasts!

I also got the chance to taste their breakfast meal which was really a very big meal that really gives you that fulfilled feel. Consisting of eggs, bacon, sausages and pancakes, its perfect combination with a hot cup of coffee or tea. Though American in origin, I did felt that it has this "pandesal and kape" (bread and coffee) feel, cozy yet simple.

Speaking of cozy, I also noticed how the store is set up, though the color red is dominant, it felt like its like having breakfast or lunch at home. Honestly speaking, the store design and layout is one of the things I noticed aside from the drinks and the food. 

 Here's one thing that is a first in my life... to be a barista! And yes, you heard it right, I got a chance to try to whip up a frappĂ© which was the Cookies and Mint Javakula. With the help of one of the managers, Jayson, I was able to make a drink with ultimate perfection  (well except for calling the customer's name that is). So SBC has granted one of my life wishes and I am very greatful for that fun opportunity. Fellow bloggers also tried out to stir up a drink which they also succeeded. I was very nervous, yet the experience is definitely worth it!

Now one of the juciest part of this review on SBC is its endorsers, though not the superstars but more of world achievers to be exact. Well there is premiere model-turned-hunk actor and first celebrity sole survivor Akihiro Sato, beauty empire heiress Cristalle Belo, model and Animax VJ Stephanie Henares, celebrity daughter and stylist to the stars Alyanna Martinez, director Paul Soriano and International Publicist Joyce Ramirez (pictured above). They belonged to the top 10 customers of SBC who was very loyal of the brand for years. As Akihiro was named as the winner for Survivor Philippines Celebrity Edition, it will be another pride to the store as these top customers are achieving more heights. 

Now, I appreciate coffee shops more now and looking forward to have another cup, especially a cookie and mint frappé!
